Meet Our Chef

Our amazing Chef, Luis Casero is from Paradise in the North of Spain. He was raised in the kitchen and comes from a long line of family chefs that include his grandmother and mother. His love and passion for food began at an early age from spending time on their cattle farm and family run restaurant.

Luis studied cooking in North Spain and mentored by local chefs Ramon Celorio, Juan Galvez, Jaroslaw Asyngier. He started his professional career in  Michelin Star restaurants in Spain and has travelled the world for inspiration, sampling sophisticated foods. While living in Brittany France, he worked in a restaurant with 17pt in a Gault Millau guide under Chef Patron Jean Luc L’hourre  M.O.F..

In 2003, Luis moved to Ireland for the weather. Over the years, he worked in the Clarence Hotel, Gables in Foxrock and was part of the culinary team that launched the Donnybrook Fair restaurant as solo head chef.

Luis’s food has been enjoyed by the likes of Bono, the Edge, and many other famous celebrities such as Brian O’Driscoll, Roseanna Davidson, ENYA, Chris de Burgh to name a few.
